Skinny Deserts

Today on my morning run, I thought, "Not everyone can eat cake. Some people are dieting, some can't have the added carbs, or some have allergies.". So, I thought that I would make a page for those that need the "skinnier, carb or gluten free deserts".

I decided to start with the familiar to dieters No Pudge Fudge Brownies. Now, you can purchase the pink box mix started by pediatric nurse, Lindsay Frucci in 1995 at stores like Fred Meyer, Smith's and Target. But, this will set you back about $4 or more. I'm super frugal, so that would be a struggle for me.

Here, you can make your own. I prefer the make you own method, as then I know what I'm putting in it. I haven't had it in a couple years. But, grocery day is right around the corner, so I think I'm going to surprise my husband with it. He loves his brownies.

I really like recipes from TopSecretRecipes.com. Todd Wilbur is really good at giving people the recipes to those favorite foods that make your mouth say MMMmmm. However, you have to purchase his recipes to use them. So, I turned to www.Pinterest.com. After testing several recipes, I came up with my own. Every recipe I tried was either too sweet, or the brownies never rose, so they were dry. Below is what I came up with. I'm not sure they'll last too long once my husband gets home.

Ingredients

3/4 cup of applesauce (Natural, unsweetened is best.)

3/4 cup of sugar (sifted) Or as once persone told me, you can put the sugar through your coffee grinder to get that perfect finery.

1 cup of the Dutch-processed cocoa powder (I used Hersheys.)

1/2 tsp salt (You can always use sea salt. But, I'd use the coffee grinder method. You don't want huge chunks of salt in your brownies.)

2 cups plain yogurt (fat-free or 2% ) I used Greek Yogurt, but some people do not like it.

2 tsp vanilla (Pure exctract is best. But, immitation works too.)

1 cup walnut pieces (These are not necessary. Just good eating.)

Directions

Preheat your oven to 350 degrees. Spray a 8x8 glass baking dish with non-stick cooking spray.
Line the pan with wax paper. This will make it easier to get your brownies out of the pan, and cleanup so much easier. Spray the wax paper with the non-stick spray as well.

Mix all of the dry ingredients, sugar, cocoa, salt and walnut pieces. Add the yogurt, applesauce and vanilla and mix well on medium speed. The batter will be thick, especially if you use the Greek yogurt. Beat until shiny for the best results.

Pour the batter into the pan. Bake for 25-30 minutes. The less you cook it, the more fudgy it will be. Check it with a toothpick or fork about 20 minutes in. However, remember that it will continue to bake for up to 5 minutes once removed from the oven and placed on the cooling rack. Allow to cool for 5 more minutes after the 5 baking minutes.

Then, simply pull the brownie out of the pan with the wax paper and cut to serve. You can always touch it up with some frozen yogurt or ice milk.
